- 1 whole Beef Chuck Roast
- 2 tbsp Rock's Anytime Spice Blend
- 2 tbsp Rock's Coffee Rub Spice Blend
- 2 tbsp Better than Bouillon Beef
- 1/4 whole White Onion
- 2 tbsp Yellow Mustard
Instructions
- As we begin preparing our chuck roast, it is important to preheat our Traeger Timberline XL to 225º. This will ensure that the roast cooks evenly and thoroughly.
- To coat all sides of the chuck roast with yellow mustard, start by spreading a thin layer of the mustard over one side of the roast using a brush or a spoon. Then, flip the roast over and repeat the process, making sure to cover the entire surface. Continue to apply the mustard until all sides of the chuck roast are evenly coated.2 tbsp Yellow Mustard, 1 whole Beef Chuck Roast
- To season your beef chuck roast, start by evenly shaking Rock's Anytime Spice Blend and Rock's Coffee Rub Spice Blend on all sides of the meat. Use equal parts of each spice blend for the best flavor. Make sure to coat the entire surface for an even distribution of flavor.2 tbsp Rock's Anytime Spice Blend, 2 tbsp Rock's Coffee Rub Spice Blend
- To smoke this beef chuck roast on your Traeger Timberline XL, first, make sure that it is up to temp at 225º. When it is place your uncovered beef chuck roast directly on the grill and activate the Super Smoke setting. Smoke it for 3 hours, until the internal temperature reaches 140-150º.
- While you wait for your next step, you can prepare your beef broth by adding 2 tbsp of Better than Bouillon Beef to boiling water. Don't forget to also chop your white onion to use later in your recipe.1/4 whole White Onion, 2 tbsp Better than Bouillon Beef
- Once 3 hours have passed, transfer the beef chuck roast to an aluminum pan. Pour in the beef base and add the cut onions. Ensure to cover the pan tightly with aluminum foil.
- To ensure this beef chuck roast is able to be pulled apart turn up the temperature of your Traeger Timberline XL to 325º and continue cooking for an additional 2-3 hours until the internal temperature reaches 203º. This will allow all the internal fat to render down and allow for easy pulling.
- After the beef chuck roast has rested for at least an hour, use insulated gloves to pull it apart by gently tearing the meat into small pieces and continue until it is fully shredded. Be sure to remove any excess fat or gristle as you go. Once it's shredded, you can use it in a variety of dishes, such as tacos, sandwiches, or stews. Enjoy!
