Ingredients for Cilantro Lime Rice

  • 3 cups Jasmine Rice:  Jasmine rice is a long-grain variety of rice known for its distinctive aroma, delicate flavor, and slightly sticky texture when cooked. Originating from Thailand, jasmine rice is often used in Southeast Asian cuisine.
  • 2 tbsp Salted Butter:  A popular and versatile ingredient in both cooking and baking, known for a rich, creamy texture and slightly salty taste. Its savory profile adds depth and richness to both sweet and savory recipes.
  • 1 whole lime:  This small, green citrus fruit is known for its tart and tangy flavor, making it a popular ingredient in a variety of culinary applications. They are round or oval in shape, with a thin, smooth skin that can range from bright green to yellowish-green when fully ripe.
  • 3-4 stalks of cilantro:  An aromatic herb widely used in various cuisines around the world for its fresh, vibrant flavor. The plant has delicate, lacy green leaves and a distinctive, slightly citrusy taste that can add a burst of freshness to any dish.
  • 1 tbsp Smoked Q Rock’s Anytime Seasoning:  This delicious all-purpose rub brings in delicious garlic flavors while keeping it true with salt and pepper.

Instructions for making Cilantro Lime Rice

1. Cook up some rice:  Cook the jasmine rice, either in an instant rice cooker or boil to the directions in a pot or sauce pan.

2. Butter the rice:  With the rice still hot, fold in 2 tbsp of salted butter and allow to melt while incorporating by folding the rice.

3. Cut up the lime:  Next, cut the lime in half and squeeze it into the rice (use both halves for maximum lime flavor), then incorporate by folding the rice over.

4. Chop up the cilantro:  Next, fine-chop some cilantro with your chef’s knife and then incorporate it into the rice.

5. Season to taste:  Lastly season to taste, for this recipe I use my Smoked Q Rock’s Anytime Seasoning – but feel free to use any SPG.

6. Serve it up:  After one final fold to incorporate all the flavors, it is ready to serve!

Variations and Substitutions:

Alternate Rubs: If you don’t have any of my delicious Rock’s Anytime spice blend handy, there are many great AP rubs out there, some of my favorites are Heath Riles Everyday rub and Killer Hogs AP rub.  But if you’re in a pinch, keep it simple with some salt and pepper.

Tips and tricks for making this Cilantro Lime Rice

  • Fresh Cilantro and Lime: For the best flavor, use fresh cilantro and freshly squeezed lime juice. The vibrant flavors of fresh ingredients will make a noticeable difference in the taste of the rice.
  • Rinse the Rice: Rinse the rice under cold water before cooking to remove excess starch. This helps in preventing the rice from becoming sticky.
  • Mix While Warm: After the rice is cooked, fluff it with a fork and immediately mix in the chopped cilantro, lime juice, and a little bit of olive oil or butter while the rice is still warm. This helps the flavors to blend well and infuses the rice with a delicious, zesty taste.

  • 2 cups Jasmine Rice
  • 3 cups water
  • 2 tbsp Butter
  • 1.5 whole Limes
  • 1/4 bunch Cilantro
  • 2 tsp Rock's Anytime Spice Blend

Instructions
 

  • Begin by cooking our jasmine rice in an instant rice. First measure 2 cups of jasmine rice. Then, pour the rice and 3 cups of water into the rice cooker and press the "cook" button and wait for the rice to finish cooking.
  • Once the jasmine rice is cooked, mix in 2-3 tablespoons of butter to prevent it from sticking.
    2 cups Jasmine Rice
  • Then cut one lime in half, and squeeze out the juice into the rice. Once squeezed out, fold in to incorporate.
    1.5 whole Limes
  • Next finely chop 4-5 strands of cilantro, then gently fold into the rice.
    1/4 bunch Cilantro
  • To complete the dish, add 2 teaspoons of Rock's Anytime Spice Blend, or adjust the amount according to your preference.
