Campo Grande Ibérico Pork Review: Secreto, Presa & 4 Rib Rack Cooking Guide

Campo Grande Iberico Pork: Why I Keep Going Back for More

If you’ve hung out with me around the smoker, you know I’m always chasing new flavors. I love brisket, ribs, and all the classics, but every now and then something comes along that completely changes the game. That’s exactly what happened the first time I tried Campo Grande Iberico Pork.

This isn’t the pork you’re grabbing off the grocery store shelf. It’s rich, it’s marbled like a high-end steak, and it’s got a flavor that’ll flat-out spoil you. Once you’ve had it, “regular” pork just doesn’t cut it anymore.

What Makes Iberico Pork Different

These Iberico pigs are raised free-range over in Spain, munching on acorns and roaming open pastures. That diet and lifestyle create incredible marbling — something you almost never see in pork. When that fat hits the heat, it melts into the meat and gives you this nutty, buttery flavor that’s completely unique.

You don’t have to do much to it either. Forget heavy sauces or complicated rubs — a little seasoning, hot grill, and you’re in for something special.

My First Cook with Campo Grande

I kept it simple to really see what this pork was about. I grabbed a Secreto cut (kind of like the hidden gem of Iberico pork), hit it with some of my Anytime Anytime Seasoning, before rolling it on the Traeger low and slow. After finishing it off with a quick crust in the cast iron on the induction top, it was ready!

When I pulled it off and sliced into it, I swear I had one of those “where has this been all my life?” moments. Crispy outside, juicy inside, and flavor that honestly reminded me more of steak than pork. I had to stop myself from eating half of it before I even thought about plating it.

Cuts Worth Checking Out

Campo Grande offers a few different cuts, and each one’s got its own personality:

  • Secreto – Thin and marbled, perfect for searing hot and fast.
  • Presa – A shoulder cut that’s thick, steak-like, and best served medium-rare.
  • 4 Rib Rack – Beautifully marbled, think pork chop attached to a rib. It’s the kind of cut you throw on when you want to wow a crowd.

Each cut has that signature Iberico marbling, so no matter which one you grab, you’re in for something memorable.

Why Campo Grande Works for Me

I’ve tried plenty of “specialty” meats that didn’t live up to the hype, but Campo Grande delivers every time. The cuts are consistent, well-trimmed, and show up fresh and ready to hit the grill. I don’t have to drive all over town looking for a butcher who might have Iberico — it just shows up at my door.

For someone like me who’s often cooking for a crowd, that reliability is a huge win.

Cooking Tips

  • Keep it simple – Let the pork shine. Light seasoning is all you need.
  • Cook hot and fast – High heat sear, then pull it off early. Don’t take it to “well done.”
  • Think steak, not pork chop – Medium to medium-rare is the sweet spot.

Final Thoughts

If you’re serious about BBQ or just want to experience pork in a whole new way, Campo Grande Iberico Pork is absolutely worth trying. It’s rich, tender, and has a depth of flavor that’ll make you rethink what pork can be.

I’ve been hooked since the first bite, and now it’s become one of my go-tos when I really want to impress friends or treat myself. Trust me — once you try it, you’ll see why Iberico has the reputation it does.
